I was born and raised in a family that owned a liquor store. As a young man, I didn't see a future in the job of carrying heavy bottles and making deliveries.
However, after my parents passed away, I inherited the family business. As I pondered what to do, I decided to dedicate myself to introducing Japanese sake to the world.
As I began to study the culture and history of sake, I was amazed by its depth. I was fortunate enough to connect with dedicated breweries and master brewers.
Sake brewing relies on rice, water, and koji mold. The koji mold, in particular, plays a crucial, though invisible, role in creating delicious sake.
Most breweries have a small shrine, and you can often see people praying for good sake. This demonstrates a core part of Japanese culture—a deep respect and reverence for the blessings of nature.
Recently, the number of breweries we work with and the variety of premium products we offer has grown.
